EGG PORATU/BURJI

Ingredients:
  • Eggs : 4
  • Onions :2 medium size
  • Green chillies : 4-5
  • Red chilli powder : 1 tsp
  • salt accordingly
  • Turmuric powder a pinch
  • oil 3-4 tsp


 Method:


Chop the onions and green chillies into very small pieces . keep them aside.

  Heat the Pan with 3-4 tsp of oil and then add onions and green chillies.fry till onions turn into transperant color.

 Add salt and turmuric powder and fry for a min then add eggs to the onions and mix well in medium heat.

make sure to toss the eggs in onions for every 2 min otherwise it will not be tasting good.when the egg is fried completely add Red chilli powder and fry for 3-4 min.toss it untill egg burji become small . turn off the heat.

Spicy corn chat with egg

Ingredients
  • 1 cup of corn
  • 1 egg
  • 1 medium onion
  • 1 green chilli
  • 1/4 cup cashew nuts
  • 1 tsp jeera
  • 1 tsp mustard seeds
  • curry leaves
  • coriander leaves
  • salt
  • oil
Method :

 Heat a pan,add oil to it.Now add mustard seeds,jeera and let it fry until mustard seeds splutter.

Add cashew nuts and let it turn light brown in color.Now add curry leaves,chopped green chilli and fry for a minute.

Add egg yolk to it and let it completly cook in low heat.Add chopped onion and fry until onion becomes transluent.

 Add corn to it and let it fry on medium heat after adding salt.If required sprinkle few drops of water meanwhile.

Finally garnish with coriander leaves and serve.

Note : You can try by avoiding the egg for vegetarians..

Mexican omelette

Ingredients:
  • Eggs - 6
  • Potatoes - 250 gm(cut into cubes)
  • Onion - 2 big
  • Green Chillies - 3(finely chopped)
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Cheese slices - 2
  • Coriander - 1 tbsp(finely chopped);
  • Salt to taste
  • Oil.
 Method :

 Cut the onions into thin slices and saute them with enough oil and salt till it is dark brown in colour.

 Then shallow fry the potatoes separately with enough oil till becomes soft and tender

Take a big bowl, whip the eggs and then add the cooked potatoes and onions.

 Then add green chillies, grated cheese, turmeric powder, coriander, pepper powder and enough salt. Mix them well

Heat oil in pan. Pour the mixture and spread. Cover the pan with a lid.

 Cook for about 7 to 8 min in medium flame or till the underside is brown in colour.

 Turn over the omelette in a plate and then again into the pan, so that the otherside can be cooked well.

Egg parata/veg parata

INGREDIENTS

*Cooked parotta’s -1 packet (usually cooked is good than raw ones. one pack may contain 5 0r 6 Parotta’s)
*Onion big size finely chopped -1 (more the onion more the taste is)
 *Tomatoes medium size -2 (chop finely)
*Chilli powder- 1/2 to 1 tsp
* Turmeric powder -1/2 tsp
* Salt and oil as needed
* Curry leaves and corriander leaves chopped
* Eggs – 5 (almost one egg for one parotta)



Method :
 Heat the parotta’s and cut/tear it into very small bits and pieces with hand .

 Pour 3 to 4 tsp oil in kadai.Heat it then add finely chopped onions and tomotes. Again how finely you are chopping is proportional to the taste.

 Fry them well for 5 to 10 mins

Then break the eggs and pour in that masala and mix well in the masala

 Finally add the parotta’s into it. Mix them all well .Cook them for another 5 mins

Note/Variation

Vegeterians can subsitute egg with CABBAGE OR CAULIFLOWER tastes really good.You can say as CAULIFLOWER PARATA/CABBAGE parata . In that case while frying onion and tomatoes in step 2 you need to add chopped cauliflower/Cabbage and sprinkle some water and let it to cook until cauliflower is done. Then add the parota pieces and mix well.

Yogurt pancakes

Ingredients:

*1 egg
*1/2 cup fruit flavored yogurt
*1/2 cup milk
*1 tablespoon oil
*1 tablespoon sugar
*1 cup all purpose flour
*1 teaspoon baking powder
*1/2 teaspoon baking soda


Method:

Mix all the wet ingredients plus the sugar in one bowl. In another bowl combine the dry ingredients.

Add the flour mixture to the liquid and mix. The batter will be fairly thick and a little lumpy.

Grease a pan or griddle and put one tablespoon of batter on to cook at a time.

Cook slowly over low heat until the pancakes bubble, then flip.

 Serve with a dab of yogurt and sliced fresh fruit on top.

Egg snack/egg fingers (variation)

Ingredients:


*6 eggs
*3 Slices of bread cut into 5 cm (2 ") fingers
*1 green chilli, finely sliced
*½ tsp. pepper
*1-2 tbsp. milk
*1 onion, finely sliced
*Salt to taste
*Oil(butter)optional
*sugar (variation)

Beat the eggs well, then add the milk, onion and chilli. Blend well and season with salt and pepper.


Heat the oil. Dip each bread finger into the egg mixture and fry in the hot oil till golden brown on both sides. Drain well and serve immediately
 
Variation:if you don't eat spice u can just skip chilli,pepper,onion,salt and instead of these u can add  only some sugar.
 
Add milk,beaten eggs,sugar blend well and dipp bread piece both sides in that mixture and fry on a skillet both sides with some butter..

Egg fingers/egg snack

Ingredients:

*Eggs-4,
*Bread crumbs-1/2 cup,( For bread crumb recipe click here)
*Pepper and salt – to taste.

Method:

Cut boiled eggs into 2 or 4 vertical slices and roll them pressing in bread crumbs and deep fry it.

Sprinkle salt and pepper on those tasty fingers. Egg fingers are ready to serve with tomato sauce.

Egg sandwich

Ingredients:

*Brown bread/ white sandwich bread – 1 loaf,
*Boiled eggs – 2,
*Cheese slices- 3 to 4,
*Sandwich spread/mayoneese,
*Salt and pepper – to taste.
*Method: Cut boiled egg into thin slices.














Method :Put them on the bread slice and sprinkle salt and pepper on the boiled egg slice and on the top of that put cheese slice, apply sandwich spread/mayoneese to the other bread slice and close with second bread slice.

You can eat this sandwich directly or you can grill this sandwich

Potato-Chip Muffins

Ingredients:

*6 eggs
*2 tbsp milk
*salt & pepper
*1/2 cup spinach
*1 onion, finely chopped
*1 tomato, finely chopped
*1/2 cup shredded cheddar cheese
*a handful of potato chips, crushed
*1 tsp extra virgin oil

Method:

Preheat oven to 325 F. Whisk in a bowl- eggs, milk with salt & pepper.

 Heat oil in a pan, saute onion, tomatoes and spinach for 2-3 mins. Add this to the egg mixture.

Grease the muffin pan with oil and fill it some cheese and egg mixture - until three-quarters full. (Tip: If you have any empty cups left, fill them with some water to bake all the muffins evenly.)

 Bake for 8 minutes and then sprinkle crushed potato chips over each of them. Bake for 5-6 more mins. Let them sit for a minute or so.

Run a knife around the edges to loosen. Serve!!

Egg Tortillas

Ingredients :

*3tbsp vegetable oil

*Half an onion, chopped
*1 clove garlic, crushed
*2 tomatoes, chopped
*½tbsp jalapeno chillies, drained
*2 large eggs
*2 soft flour tortillas
*Fresh coriander to serve
 
 
Method :
 
Heat 2tbsp of the oil in a frying pan, add the onion and garlic and sauté for 4 mins or until soft.


Add the tomatoes and sauté for a further 3-4 mins or until soft. Season and stir in the jalapenos. Transfer to a bowl and keep warm.

Wipe out the pan and heat the remaining oil. Gently crack the eggs into the hot fat and cook for 2-3 mins, depending how you like your eggs. Use a teaspoon to spoon a little hot oil over the egg yolks during cooking.

Warm the flour tortillas according to packet instructions. Divide the tomato mixture between them, then top each with a fried egg. Scatter over fresh coriander and serve.

Egg tortillas mix(mexican style)

Ingredients :

*2 corn tortillas
*Vegetable oil
*Butter
*1 tablespoon diced bell pepper/jalapenos chillies
*1 tablespoon diced onion
*1 tablespoon diced tomato
*2 eggs
*1 clove garlic crushed

Method :

In a skillet, fry corn tortillas in hot vegetable oil until crispy.

 Drain. Remove oil from heat, Cut tortillas into bite-sized pieces.

In butter, saute bell peppers and onion,clove garlic crushed until soft. Add tomatoes. Beat eggs well.

Add eggs to sauteed vegetables. Add tortilla chips. Scramble until eggs are done.

Ready to serve

Instant Egg dosa

Ingrediants :

*Ingredients
*Rice flour- 4 cups
*Green Chillies- 4 to 5
*Eggs-2
*Jeera- 1 tbsp
*Grated Coconut - 2 cups
*Coriander Leaves
*Salt to taste
*Water
*Oil (for making the dosas).


Method :

Method: Mix rice flour and eggs then add water to dosa consistency, i.e, It should be thick enough to be poured (like the consistency for a pancake).

Cut green chillies into small pieces. Add them to the rice flour and water mixture.

Further more, add jeera, grated coconut, coriander leaves and salt to taste.

Heat tawa and pour oil to grease the pan (tawa). When the pan is hot enough, pour some of the batter into a dosa . Cook for 3 to 4 minutes.

Tastes great when served with Tomato Chutney or Pudina Chutney or Mango Chutney.

Veggie burrito

Ingredients :

*2 tablespoons olive oil
*1/2 cup chopped green bell pepper
*1/2 cup chopped red bell pepper
*1/2 cup chopped yellow onion
*1 1/2 cups fresh corn
*1 jalapeno, finely chopped
*2 teaspoons minced garlic
*1 teaspoon salt, divided
*6 large eggs
*3 tablespoons heavy cream
*1/4 teaspoon black pepper
*2 tablespoons unsalted butter
*1 tablespoon chopped fresh cilantro leaves
*1/2 cup grated queso blanco (Mexican white cheese)
*4 (10-inch) flour tortillas, gently warmed and kept covered until ready to use (store bought)


Method :

Set a nonstick, 10-inch saute pan over medium-high heat. Add the olive oil to the pan and once hot, add the bell peppers, onion, corn, jalapeno and garlic to the pan.

Cook the vegetables, stirring often, until the vegetables are softened, about 10 to 12 minutes. Season with 1/2 teaspoon of the salt, remove from the heat and put on a plate to cool.

While the vegetables cool, return the pan to the heat and in a medium bowl, combine the eggs, heavy cream, remaining 1/2 teaspoon of salt and the black pepper.

 Use a whisk to beat the eggs until frothy. Add the butter to the pan and once melted, pour the beaten eggs into the pan and use a rubber spatula to scrape the sides and bottom of the pan to ensure that the eggs cook evenly.

After 2 minutes the eggs should still be a bit wet, sprinkle the cilantro over the eggs, followed by the grated cheese and remove from the heat.
