Tammarind chutney/Black chutney for chats

Ingredients :
  • Tamarind pulp : 2 cups
  • dates syrup : 1/2 cup
  • jaggery : 3/4 cup
  • cumin powder : 1 tsp
  • fennel seeds powder : 1 tsp
  • red chilli powder : 1/2 tsp
  • salt : to taste
  • oil : 1 tbsp


First heat oil in a pan. Add the cumin powder, fennel seeds powder, red chilli powder and salt and keep mixing so that it does not get burnt.

 Immediately add the tamarind pulp, dates syrup and jaggery along with 2 cups water and keep boiling. Remove from flame if u find that the syrup gets thicker.

Store in an air tight bottle in the refridgerator. Use for recipes  for sweet n sour chutney and you can use this for chats like bhel poori,ragada,paani poori etc..

Green chutney/green mint water

Ingredients :
  • Corriander leaves : 2 cups chopped
  • cumin seeds: 1tsp
  • mint : 1/4 cup (optional)
  • green chilli : 1 chopped finely
  • lime juice : 1/4 cup
  • black salt : a pinch
  • salt : to taste


 
Method :

Grind all the above ingredients with water to make a smooth paste. U can add one tsp of dry coconut powder also while grinding to make it a thicker paste. Use it as recipe calls for green chutney. Can use for all types of chats and  for paani poori too.

Murmure mixture/puffed rice mixture/maramarala masala

Ingredients:
  • Puffed rice - 3-4 cups
  • Carrot grated -3 tsp
  • Tomato - 1/4 cup
  • Onions - 1/4 cup
  • Raw mango - 2 tsp{Or lime juice}
  • Chilly powder -1 tsp
  • Garam masala -1/2 tsp
  • Coriander powder-1/4 tsp
  • Oil -3 tsp
  • Coriander leaves - 2 tsp
  • Roasted peanuts -3 tsp 



Method:

 Take a vessel, add onions, tomato,carrot grates,raw mango grated or amchur/lime juice,salt ,all other masalas mentioned in the above and mix properly.

 Add puffed rice and mix properly .If you are using lime juice add at the end.

 Then garnish with coriander leaves and ready to eat..

Spicy corn chat with egg

Ingredients
  • 1 cup of corn
  • 1 egg
  • 1 medium onion
  • 1 green chilli
  • 1/4 cup cashew nuts
  • 1 tsp jeera
  • 1 tsp mustard seeds
  • curry leaves
  • coriander leaves
  • salt
  • oil
Method :

 Heat a pan,add oil to it.Now add mustard seeds,jeera and let it fry until mustard seeds splutter.

Add cashew nuts and let it turn light brown in color.Now add curry leaves,chopped green chilli and fry for a minute.

Add egg yolk to it and let it completly cook in low heat.Add chopped onion and fry until onion becomes transluent.

 Add corn to it and let it fry on medium heat after adding salt.If required sprinkle few drops of water meanwhile.

Finally garnish with coriander leaves and serve.

Note : You can try by avoiding the egg for vegetarians..

Chuduva/puffed rice masala


Ingredients:
  •  5-6 cups Puffed rice ( murmure)
  • 1/4 Peanuts (roasted)
  • 1/4 cup  beaten rice (patla poha)
  • 1-2 tsp Garlic paste
  • 1/2 tsp Hing
  • 1 tsp Red chili powder
  • 1tsp Cumin seeds
  • 1 tsp Mustard seeds
  • Few curry leaves
  • Sugar as per taste (powdered sugar)
  • Salt as per taste.

Method:

Place the poha in a shallow microwave safe dish and microwave on HIGH for 2 minutes. Keep aside

 Heat the sauce pan with oil, add cumin ; mustard seeds, curry leaves and allow them to splutter. Add garlic paste, peanuts and fry for few minutes.

Add red chili powder, turmeric powder, hing , salt and turn of the heat.

Add puffed rice and poha mix it with tadaka. It takes time to coat the oil all over the puffed rice. Gently mix it.

Sprinkle powdered sugar, cumin powder and mix it.

Let it cool completely. Serve with Bhaji /pakoda or just with mixed  Sev.

Note:
  • While tempering keep very low flame other, otherwise the masala will burn fast.
  • If Puffed rice are soft, then dry roast them on low flame. This will help to keep them crunchy.
Or Try with chopped Onion, Tomatoes, Coriander leaves and Lime juice.

Poosa(kaara poosa)/Sev

Ingredients:

*1 cup Besan/Bengal Gram Flour
*¼ tsp Hing/Asafoetida
*¼ tsp Haldi/Turmeric Powder
*2 tbsp Hot Oil
*Oil for deep-frying
*Salt to taste
*chilli powder 2tsp (optional)



Method:

Mix Besan, Salt, Hot Oil, Hing, turmeric,chilli powder(around 3 to 4 tbsps) to prepare a stiff dough.

In the Sev/chakrala gidda , choose a plate with very tiny holes.

Fill the dough into the utensil and press out strands to form a mesh directly in hot Oil. Deep fry on low flame and remove on kitchen towel.

 Let it cool, crush it and store in airtight containers. This can be used to garnish a variety of Chaats

Variations:

Ingredients like Chili Powder or Carom Seeds or Jeera Powder or Garlic Paste can be added to derive different flavor Sev. Either one ingredient or a combination of the above ingredients can be added.

Andhra toast

INGREDIENTS

* Red Chilli  Sauce
*Bread 2 slices
*Potatoes
*Spices
*Oil for frying
*Corriander
*sev/poosa
*salt

METHOD

First cut the bread in two halfs and fry them in oil.

Smash the potatoes. Add some salt and red chilli powder to taste.

Appply it on the bread. Put some red chilli sauce.

Garnish it with sev and corriander.

Masala appadam/papad chat

Ingredients:

*2 - papads 2 Tbsp - Chopped onions
*2 Tbsp - chopped Tomatos
*2 Tbsp -chopped Cilentro
*1Tbsp - Tamarind Sauce
*1Tbsp - chopped Green chilles
*1Tbsp chat masala powder


Method:

Fry the papads, cut and put it in a plate. sprinkle Chat masala powder,and garnish with chopped Onion,Tomatos,Cilentro,Green chilles and finally with Tamarind sauce..

Egg tortillas mix(mexican style)

Ingredients :

*2 corn tortillas
*Vegetable oil
*Butter
*1 tablespoon diced bell pepper/jalapenos chillies
*1 tablespoon diced onion
*1 tablespoon diced tomato
*2 eggs
*1 clove garlic crushed

Method :

In a skillet, fry corn tortillas in hot vegetable oil until crispy.

 Drain. Remove oil from heat, Cut tortillas into bite-sized pieces.

In butter, saute bell peppers and onion,clove garlic crushed until soft. Add tomatoes. Beat eggs well.

Add eggs to sauteed vegetables. Add tortilla chips. Scramble until eggs are done.

Ready to serve

Chatpata/simple chat

Ingrediants:

*peanuts 1cup
*oil 1/4 cup
*kottimeera/cilantro 1/2 bunch
*pachhi mirchi/greenchilli- 5-6 num
*ginger 50gms
*seasame seeds 50gms
*dry chilli 7 to 8 nos
*dhania  (coriander-cumin powder)jeera powder 2 spoons
*masala powder 1spoon

Method :

soak the peanut in water for 1 hour now put it in pressure cooker and cook it till done.

 take a pan and dry fry the seasame seeds and dry mirchi make a powder of it in the mixer make a smooth paste of greein mirchi and ginger in the mixer take a pan put oil ,put the mirchi ginger paste and fry it.

 now add the cooked peanuts and mix it thoroghly then add the seasame powder and mix it then add the dhania, jeera powder and masala powder and mix it thoroghly .

Garnish  it with cilantro, delicious snack is ready.

Pappad snack/appadam snack

Ingrediants:

*4 Lijjat Pappad
*1 Tomatoes
*small Onion
*Fresh Coriander leaves-half bunch
*Oil for frying.

Method:

Lijjat pappad (black pepper flavour i.e miriyalu) flavor tastes very good.

Fry the pappad and put them aside. Chop the tomatoes,onions and coriander leaves into small pieces.

Sprinkle these chopped pieces onto the fried pappad and your snack is ready to eat. You are done in a jiffy.

Bread chat

Ingrediants

*Bread- 4 slices
*potato - 1 big
*Tomato - 1 big
*onion - 1
*lemon-1/2
*coriander - 1 bunch
*mint(pudeena) - 1 bunch
*sanna karapoosa-for garnishing
*salt- to taste
*chilli powder -1/2 tsp
*oil - 2-3 tsps



Method :

Boil potato and cut into cubes and keep aside. Cut onions,tomatoes in to small pieces.

Make paste of corriander and mint adding some water if necessary.

toast the bread slices in a toaster or oven and cut them into cubes.

take oil in a kadai and heat it for 2 mins. add potato cubes and toss it till golden brown. add salt and chilli powder.

Now add bread cubes and toss it for 2 mins. Now add the coriander and mint paste and heat it for 2 mins.

take that in a serving bowl and garnish it with onions,tomatoes,lemon juice,poosa and serve

Bhel puri

Ingredients :

*1/2 cup Puffed Rice
*1/2 cup Sev
*1/4 cup Chopped Onion
*1/2 cup Dal-mixture
*2-3 Chopped green chillies
*1/2 cup Tamarind Chutney
*2 tbsp Lime Juice
*3-4 Boiled and chopped potatoes
*1/2 tsp Red Chilli Powder
*1/4 tsp Black Salt (also known as Rock Salt)
*Salt to taste


Method :

Mix all the above ingredients well & serve garnished with coriander leaves.

Vada paav

Ingredients :

• 4 Boiled Potatoes
• 2 Cups besan
• 2 Garlic flakes
• 1 Ginger
• 2 Chopped onions
• 1 tsp Cumin seeds
• 1 tsp Turmeric powder
• 1 Cup coriander
• Salt to taste
• Oil for deep frying
• 5 Pav


Method :

Add water to the mixture and make batter of medium consistency. Peel the potatoes and mash it by hand.

 Make a paste of garlic and ginger. Add garlic ginger paste,coriander to mashed potato.

 Make small balls of mashed potato mixture. Heat the oil.

 Dip each ball in the batter and fry the balls till they turn golden brown.

Split the pav keeping the base intact.

Place the vada into it.

 Vada Paav is ready

Ragada Chat and ragada patties

Ingredients:


For Ragada :

* 1 1/2 cup Dehydrated White Peas, soaked overnight
* 3 cup Water (saved from the boiled peas)
* 1 tbsp Oil
* 3 Green Chilies
* 1 tbsp Chopped Coriander
* 1 tbsp Chopped Mint
* 1/4 tsp Black Salt
* 1/2 tsp Pepper Powder
* 1/2 tsp Turmeric
* 1/2 tsp Cumin Powder
* 1/2 tsp Garam Masala

For Patties

* 4 Potatoes, boiled, peeled, mashed
* 1/4 cup Semolina (rava)
* 1/2 cup Bread Crumbs
* 8-10 Green Chilies, crushed fine
* 1 tsp Ginger, grated
* 1 tbsp Oil
* 1/4 tsp Turmeric Powder
* Salt to taste
Oil, to shallow fry patties.

Method

For Ragada:

Wash and pressure cook peas in water till well done. Cool 3 tbsp. peas for blend.

Blend together cooled peas, green chilies, mint, coriander Heat oil, add paste. Fry for a minute.

Add dry masala and fry for 2-3 minutes. Add peas, water and bring to boil. Summer for 7-8 minutes till gravy thickens.




For Patties:

Mix all ingredients well with hand. Knead lightly.

With the help of greased hands form 12-14 round flat 1/2" thick 2" patties, (use mould if you want any other shapes, eg. hearts, diamonds, etc.)

Roast few at a time on a greased hot griddle. Turn once to roast other side, making them crisp and golden brown. Keep aside.




To Serve

Place two patties on a plate and serve ragada on side. Now garnish with chopped onions and coriander leaves and sev if it is available at home. Place a small lemon slice.

You can also serve by breaking the patties into bite-size pieces and pour the ragada on top and garnish with chopped onions and coriander leaves and sev.

you can have only ragada as chat item by garnishing with cilantro ,onions chopped,tammarind chutney sweet or else ragada,onions,cilantro,lime juice few drops,paani puri water mixing with ragada is a different taste..
