Corn muffins

Ingredients :
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/4 cup canola oil
  • 1 cup milk

 Method :

Preheat oven to 400 degrees F (200 degrees C). Grease muffin pan or line with paper muffin liners.

In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin cups.

Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean

Note :I added extra Mixed nuts minced on top of the muffins before keeping in to the oven.

Garlic biscuits

Ingredients :
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 5 tablespoons butter
  • 1 cup milk
  • 1 cup shredded Cheddar cheese
  • 1/4 cup butter, melted
  • 1 clove garlic, minced

Method :

Preheat oven to 450 degrees F (230 degrees C).

In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture.

 Add the milk and cheddar cheese; stir to combine. Drop batter by spoonfuls onto an ungreased baking sheet.

Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic. Brush garlic butter over hot baked biscuits.

Serve hot biscuits with ketchup or salsa

Note : I added minced garlic with the mix(dough) it self to make perfect garlic biscuits.

Banana loaf Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe banana 
Method :

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.

Stirr banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.

Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Now cut the loaf in to pieces and stored in a container for long period use.

vanilla buns

Ingrediants

*Maida 115gms
*Butter 50gms
*Eggs 2
*Milk 2 tsps
*Baking powder ¼ tsp
*Vanilla essence ¼ tsp


Method :

Beat the egg & add sugar till fluffy, then add butter and beat well.

Seive maida and baking powder & mix with egg, butter and sugar.

Later add the essence and beat well. Now pour the mixture into small bowls and bake at 450F  for
10-15 mts.

Vanilla buns are ready

Microwave egg less cake

Ingredients :

*3/4 cup aata
*1/4 cup chocolate powder,
 *1/2 cup sugar,
*1/2 cup refined oil.
*1/2 cup buttermilk

Method :

For eggless cake on microwave mode take 3/4 cup aata, 1/4 cup chocolate powder, 1/2 cup suger, 1/2 cup refined oil. put ata , chocolate powder and powdered sugar in a sieve and sieve them 5 times. now take them in a bowl and add refined oil and 1/2 cup buttermilk. make a smooth batter by mixing ina single direction. now grease a microwave safe bowl with butter. put the batter in it, microwave it for 5-10 minutes on 100% microwave. cake is ready

Banana nut cake

Ingrediants

*All pourpose flour-2cup
*Baking soda-1Tsp
*Baking Powder-3/4tsp
*salt-1tsp
*Butter-1/2cup
*Sugar-1cup
*Eggs-2
*Banana-1ripe
*Vanilla Essence-1tsp
*milk-1/3cup
*pecans Chopped-1/2cup(any nuts of choice)

Method :

Preheat oven to 375 degrees F and lightly butter cake tray.In a large bowl, combine the flour, baking soda, and salt; set aside.
With a electric mixer whip the banana &sugar for 3mts ,Add the melted butter ,eggs,vanilla and beat well, scraping down the sides of the bowl once or twice.

 Mix in the dry ingredients , milk just until incorporated.

Fold in the nuts and the mashed bananas with a rubber spatula pour the batter into the cake tray .

Give them a rap on the counter to get any air bubbles out.

Bake until a toothpick stuck in the Cake comes out clean, 18 to 20 minutes.

 Let cool for a few minutes before turning the cake out. Serve warm or at room temperature

Plain cake (From the scratch)

Ingredients:

*.All purpose flour – 2 cups
*Baking powder – 2tsp
*Salt – 1/2 tsp
*Unsalted Butter,Softened – 1 stick(1/2 cup) (or buttery taste)
*Sugar – 1 cup
*Large Eggs – 3 large
*Whole Milk – 3/4 cup


Method :

 Preheat oven to 350°F. In a big bowl mix flour, baking powder, and saltl.

Beat butter , sugar ,eggs ,milk in Mixi until all gets mixed well.

Pour this into Bowl in which you have mixed flour

 Mix the batter well by stirring atleast for 5 mins until it becomes soft with out and unmixed flour bubbles.

 Coat aluminium foil trays (or baking pans) with butter and put two spoons of flour and make thin coating above butter coating

 Then spread the batter evenly in pan and bake the cake in middle of oven for about 20 to 25 minutes.

 Cool for 5mins and then transfer the cake slowly by keeping the cake tray up side down to the plain plate.
 
you can cut in to pieces n stored in a air tight container.

Potato-Chip Muffins

Ingredients:

*6 eggs
*2 tbsp milk
*salt & pepper
*1/2 cup spinach
*1 onion, finely chopped
*1 tomato, finely chopped
*1/2 cup shredded cheddar cheese
*a handful of potato chips, crushed
*1 tsp extra virgin oil

Method:

Preheat oven to 325 F. Whisk in a bowl- eggs, milk with salt & pepper.

 Heat oil in a pan, saute onion, tomatoes and spinach for 2-3 mins. Add this to the egg mixture.

Grease the muffin pan with oil and fill it some cheese and egg mixture - until three-quarters full. (Tip: If you have any empty cups left, fill them with some water to bake all the muffins evenly.)

 Bake for 8 minutes and then sprinkle crushed potato chips over each of them. Bake for 5-6 more mins. Let them sit for a minute or so.

Run a knife around the edges to loosen. Serve!!

Banana muffins

Ingrediants :

*Self raising flour/all purpose flour-2cups
*egg-1
*sugar-1/2 cup
*Ripe bananas-2
*butter-1tbsp
*milk-1 cup



Method :

Melt the butter.Add the milk,sugar and egg,mix well with a beater.

Mash the bananas and add to the mixture.seive the flour and mix it thoroughly.Grease the muffin trays.

Preheat the oven to 200 deg.Pour in the batter into the muffin trays and place the tray in the oven.

The muffins take about 30mins to bake and rise spreading a sweet aroma in your kitchen.

Adjust the heating temperatures as per the conditions of your oven.

Note : I suggest  use  muffin layers when you prepare muffins for best results.

Cheese bread

 Ingredients : makes up to 25 pieces

* 4 cup all purpose flour
* 21/4tsp yeast instant
* 1tsp salt
* 2tbs oil
* 2tsp sugar
* 3/4 cup water
* 8oz cheddar cheese grated
* 4 ozhalloumi cheese
* 1 cup all purpose flour
* 1tsp baking powder
* 1tbs mint(dried)
* 2 eggs beaten
* 1 egg beaten for egg wash
* 1/2 cup sesame seeds

Method :

combine the flour,yeast,salt.oil,sugar in a large bowl,add water little by little kneading to make soft dough.

cover the bowl with moist cloth orp lastic wrap put it ina warm palce untill it double in size about 1-2 hrs .

while the bread is risting grate the cheese n put them in a bowl,add the flour,baking powder,mint, 2 beaten eggs stirr tehm n mix to combine uniformly.

pre heat the oven to 350F,divide the dough in to balls about the  size of egs and roll them out in to round discs.

plce about 1tbs cheese filling in the counter of each disc,pull the dough around the cheese filling by pulling up at 3-4 points to make rectangle.

pinch the 4 corners together to seal and palce on a baking sheet to rise,about 1/2 hr.you should still b able to see the cheese filling in the middle

just before baking,brush with the beaten egg and sprinkle the sesame seeds over the bread

bake for 12-15 minutes or untill golden brown and cheese filling is puffed up.

serve warm

Banana bread

Ingredients :

* 3.4 ounces all-purpose flour (about 3/4 cup)
* 3.6 ounces whole-wheat flour (about 3/4 cup)
* 1/4 cup flaxseed meal
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 1 cup mashed ripe banana
* 1/2 cup chopped walnuts
* 3/4 cup sugar
* 1/2 cup plain low-fat yogurt
* 1/4 cup canola oil
* Cooking spray

Method :
 Preheat oven to 325°. Weigh or lightly spoon flours into dry measuring cups, level with a knife.

Combine flours and next 4 ingredients (through baking soda) in a large bowl, stirring with a whisk.

Combine banana and next 4 ingredients (through oil) in a small bowl. Add banana mixture to flour mixture, stirring just until moist.

Spoon the batter into a 9 x 5–inch loaf pan coated with cooking spray. Bake at 325°F for 1 hour and 15

minutes or until a wooden pick inserted into the center comes out clean.

Cool for 10 minutes in pan on a wire rack, and remove from pan. Cool on  rack then cut in to pieces.

Zuchini bread

Ingredients :

* 3 Eggs
* 1 cup Vegetable Oil
* 2 cups Sugar
* 2 cups Zucchini, grated and well drained
* 1 teaspoon Vanilla
* 3 cups Flour
* 1/2 teaspoon Salt
* 1/4 teaspoon Baking Powder
* 1 teaspoon Baking Soda
* 3/4 teaspoon Nutmeg
* 1 tablespoon Cinnamon
* 1/2 cup Raisins

Method :

 Mix together eggs, oil, sugar, zucchini, and vanilla; set aside.

Mix together flour, baking powder, soda, nutmeg, and cinnamon; add to first mixture. Add raisins if desired.

 Pour into 2 greased and floured loaf pans. Bake at 350°F for approximately 45 to 50 minutes or until the center springs back when touched.

Turn off the oven n remove from oven and let it cool for few minutes tehn cut in to loaf bread pieces

Aloo patties

Ingredients:

* 5 boiled potatoes
* ¼ coconut
* 50gms  Raisins
* 50gms cashew nuts
* Salt
* Black pepper powder
* Oil for frying


Method:

 Boil the potatoes and peel the skin if the potatoes.
 Mash it and add grated coconut,
raisins  and cashew nuts,
salt and black pepper powder in the mixture.
Mix all the ingredients well.
 Take one drop of oil on both the palms and make small round balls of this mixture.
Heat oil in a pan and once the oil get heated put these balls in the pan for frying.
Fry it on medium flame so that it properly gets cooked from within.
Remove the balls from the pan once they became golden brown colour.
