- 1/3 cup sesame seeds
- 1 cup semolina or cream of wheat farina
- 1 cup sugar
- 1 egg
- 1.5 cup coconut cream, fresh or canned
- 1/4 corn oil
- pinch of salt
- 1.5 cup water
- 1/2 cup chopped dates, or raisins
Method :
Over medium heat, toast the semolina in a dry skillet until light brown, watching carefully as it burns easily.
Put semolina and sugar into a medium, heavy-bottomed saucepan and mix with the sugar.
Beat together the egg, coconut cream, corn oil, salt and water and pour into the dry ingredients.
Let stand for 20-25 minutes. Cook mixture, stirring constantly, for 20 minutes. The mixture will be very dense and heavy.
Off heat, stir in the dried fruit. Spread mixture in a shallow, heatproof dish, and sprinkle with sesame seeds.
Place under broiler until sesame seeds start to color. Serve warm or at room temperature.
